Soak the cannellini beans overnight.

Rinse the beans and place them in a pressure cooker or regular pot with a couple of bay leaves.

Cook the escarole until it reduces and the water is concentrated, about 3-4 minutes.

Once the escarole is wilted, add the cooked cannellini beans along with a bit of their cooking water and a bay leaf.

Mix everything well and bring to a boil, then cover and reduce the heat to simmer for 15 minutes.
