Dice 2 small potatoes into half-inch size cubes.
Transfer the diced potatoes to a baking sheet.
Drizzle 1 to 2 tbsp of olive oil all over the potatoes.
Season the potatoes with salt, black pepper, and garlic powder to taste.
Toss the potatoes to evenly coat in the olive oil and seasonings.
Spread the potatoes in an even layer on the tray.
Bake the potatoes in the oven at 425°F for 30 minutes.
Score the casing of 1 lb of sausage and remove the casing.
Add the sausage meat to a frying pan over medium heat.
Cook the sausage, breaking it up into small pieces with a wooden spoon, until browned.
Use a slotted spoon to remove the sausage meat from the pan and place it in a separate bowl, leaving the grease behind.
Remove the cooked diced potatoes from the oven.
Crack and add 5 whole eggs to a bowl and beat them together until smooth.
Season the eggs with salt and black pepper to taste.
Pour the scrambled eggs into the same pan with the remaining sausage grease.
Cook the eggs over medium heat, stirring gently with a rubber spatula until light and fluffy.
Transfer the cooked scrambled eggs to a separate bowl.
Assemble the burritos by laying out a tortilla and adding a few spoonfuls of the potatoes to the bottom.
Add a few spoonfuls of the cooked sausage meat followed by a few spoonfuls of the scrambled egg.
Sprinkle on a small handful of shredded Mexican cheese and top with a pinch of fresh chopped scallions.
Fold the two sides of the burrito in first, then fold the bottom of the wrap upwards while keeping the sides folded and filling intact.
Carefully roll the rest of the burrito up.
Continue assembling the rest of the burritos with as much filling as desired.
Place the burritos seam side down on a baking tray.
Bake the burritos in the oven at 350°F for 10 to 15 minutes.
Remove the burritos from the oven to serve.
