Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 can (5 oz) tuna, drained
  • 1 cup parsley, finely chopped
  • 1/2 cup mint leaves, finely chopped
  • 1 cup tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a medium saucepan, bring 2 cups of water to a boil.
  2. 2Add the bulgur wheat to the boiling water, cover, and remove from heat. Let it sit for about 15 minutes until the water is absorbed and the bulgur is tender.
  3. 3Fluff the bulgur with a fork and let it cool to room temperature.
  4. 4In a large bowl, combine the drained tuna, parsley, mint, tomatoes, cucumber, and red onion.
  5. 5Add the cooled bulgur to the bowl with the vegetables and tuna.
  6. 6In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. 7Pour the dressing over the salad and toss gently to combine all ingredients.
  8. 8Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
  9. 9Serve chilled or at room temperature.

  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa (optional)

Instructions

  1. 1In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and black pepper.
  2. 2Mix the ingredients until well combined and creamy.
  3. 3Take a large lettuce leaf and spoon a generous amount of the cream cheese mixture onto the center of the leaf.
  4. 4Top the cream cheese mixture with shredded lettuce and diced tomatoes.
  5. 5If desired, add a dollop of sour cream and salsa on top.
  6. 6Fold the sides of the lettuce leaf over the filling to create a taco shape.
  7. 7Repeat the process with the remaining lettuce leaves and filling.
  8. 8Serve immediately and enjoy your keto cream cheese tacos!
