Add 3 thin slices of red onion on top of the tomato.

Transfer the sandwich to a grill pan to prevent ingredients from falling off.

Top the sandwich with more grated cheese.

Place the sandwich under a hot grill until the cheese melts and bubbles.

Press down on the sandwich to help it stick together as it cooks.

Once the cheese is melted, add the top slice of bread and press it down.

Return the sandwich to the grill to toast the top slice.

Keep an eye on the sandwich as the bottom will cook faster than the top.
