Roasted Vegetable Wraps

1/2 Lg. Zucchini OR 1 Med. Zucchini
1/2 Red Bell Pepper
1/2 Green Bell Pepper
1/2 Purple Onion
1 Handful Shredded Carrots
1 Tablespoon Garlic
Olive Oil
1/2 Teaspoon Oregano
Salt & Pepper to Taste
1 Cup Fresh Basil Leaves
1/4 Cup Olive Oil
1/4 Cup Parmesan Cheese
1/4 Cup Almonds

Preheat the oven for roasting vegetables.

Chop the zucchini, red bell pepper, green bell pepper, purple onion, and shred the carrots.

In a bowl, combine the chopped vegetables with garlic, olive oil, oregano, salt, and pepper.

Spread the vegetable mixture on a baking sheet and roast until tender.

While the vegetables are roasting, prepare the homemade basil pesto by blending fresh basil leaves, olive oil, Parmesan cheese, and almonds until smooth.

Once the vegetables are roasted, assemble the wraps by placing the roasted vegetables and pesto inside the mozzarella cheese wraps.
