Fill a pot with plenty of water and place it over medium-high heat.
Once the water starts boiling, add a bit of salt and 500 grams of small potatoes.
Cook the potatoes until fully tender, about 30 minutes.
Check tenderness with a skewer; if it goes in easily, they are done.
Remove from heat and drain the cooking water, letting the potatoes cool for about 15 minutes.
Peel the potatoes by hand once they are cool enough to handle.
Place the peeled potatoes in a bowl and mash them using a potato masher or fork.
Add salt (about 8 grams), ground pepper, a bit of oregano, and 50 grams of grated mozzarella cheese to the mashed potatoes and mix well.
Taste the mixture to adjust salt, pepper, and oregano to your liking.
Add 100 grams of corn flour (maicena) and mix with a utensil, then finish mixing with your hands until the mixture is not sticky.
Form the mixture into sticks by rolling it between your hands until you achieve the desired thickness and length.
Place the formed sticks on a cutting board and continue shaping the rest of the mixture, yielding a total of 31 sticks.
Heat plenty of oil in a frying pan over medium-high heat.
Carefully add the sticks to the hot oil in batches to avoid sticking together.
Fry until the sticks turn golden brown and cheese begins to ooze out, then remove them to a plate lined with a paper towel to absorb excess oil.
Serve with ketchup, mayonnaise, or your favorite sauce.
