4 slices ciabatta, toasted and cubed

2 tablespoons mayonnaise
1 tablespoon vinegar
1 teaspoon mustard
1 clove garlic, minced

1 cup cherry tomatoes, halved
4 cups romaine lettuce, chopped
1/4 cup fresh basil leaves, chopped

Cook the bacon in a 12 inch non-stick skillet until crispy.

Transfer the bacon to one side of a paper towel lined plate.

Cook torn ciabatta in the leftover bacon fat until nice and crisp.

Drain the croutons next to the bacon on the paper towel lined plate.

Make the salad dressing by whisking together oil, mayonnaise, vinegar, mustard, garlic, salt and pepper in a large bowl.

Combine tomatoes, salt and pepper in a bowl and toss to combine.

Add some lettuce and torn basil leaves and the drained bacon and croutons to the dressing and toss to combine.
