This style was influenced by Sicilian pizza and was traditionally baked in blue steel pans used for automotive parts. It has become a beloved staple in the Midwest, celebrated for its crispy edges and cheesy, saucy goodness. Today, it has gained popularity across the U.S., with many pizzerias offering their own interpretations.

Start by preparing the dough using red flour, salt, instant yeast, and warm water.
Weigh out the ingredients for accuracy using a scale.
Mix the ingredients until they form a shaggy ball and let it rest for 10 minutes.
Knead the dough for 10 minutes until it is a wet and sticky consistency.
Set the dough aside to rise for about 2 hours until it doubles in size.
While the dough is rising, mix the cheeses: 2 parts mozzarella to 1 part Monterey Jack, and shred them yourself.
Prepare two dark aluminum rectangular pans by adding olive oil and melted butter.
Flip the risen dough over to coat it with oil, then stretch it and cover with plastic wrap to rest for 30 minutes.
Preheat the oven to 550°F (or as hot as it will go) and adjust the racks to be low in the oven.
Prepare the pizza sauce by mixing half a jar of Rayos with diced tomatoes, Italian seasoning, garlic powder, onion powder, and oregano.
After 30 minutes, punch down the dough to remove air bubbles and stretch it to fit the pan.
Spread the cheese mixture evenly over the dough, all the way to the edges of the pan.
Add pepperoni to one of the pizzas, leaving the other plain cheese.
Bake the pizzas for 19 minutes until the crust is crispy.
