Trim the ends of the ripe plantains and run a line about 4 cm deep into the flesh.
Peel back the skin of the plantains.
Slice the plantains diagonally into pieces about 0.5 cm thick.
Place the sliced plantains in a bowl to marinate for 10-15 minutes.
Sprinkle brown sugar over the plantains in the bowl.
Add a pinch of salt and cinnamon to the plantains.
Pour orange juice over the plantains and mix well to coat them in the marinade.
Melt about 1.5 tablespoons of butter in a wide pan over medium heat.
Add the marinated plantain pieces to the pan and fry for about 3-4 minutes until golden brown on one side.
Flip the plantains to brown the other side, cooking until caramelized and golden.
Remove the plantains from the pan and reserve the marinade.
Add the reserved marinade to the pan and cook for about 1-2 minutes until it thickens slightly.
Serve the plantains warm, optionally with the sauce over ice cream.
