The dish showcases the region's love for savory pies filled with fresh greens and cheese, reflecting the agricultural heritage of Macedonia. Today, Zelnik is celebrated not only in homes but also in restaurants, where variations may include different fillings and spices, appealing to both local and international palates.

Wash the kale with baking soda and soak it for five minutes.
Boil the kale in salted water for 10 minutes, then drain it well.
Mix the feta cheese, cottage cheese, and egg in a bowl.
Once the kale has cooled, mix it with the cheese mixture.
Melt unsalted butter and oil to prepare the dough.
Activate the yeast with sugar, flour, and warm water.
Knead until you have a soft dough and let it rest for 30 minutes.
Divide the dough into two portions and roll each out to fit the bottom of your pan.
Brush the rolled dough with the oil mixture.
Spread the filling on top of the dough and cover with ready filo pastry.
Brush the top with the oil mixture again.
Mix one egg with 3 tablespoons of homemade plain yogurt and brush it on top.
Preheat the oven to 375°F and bake for 30 to 45 minutes or until golden brown.
