1 pound ricotta cheese (full fat, whole milk)
1 cup grated Parmesan cheese (or 70 g)
2 eggs
2 tablespoons olive oil
freshly cracked black pepper
fresh mint (or dried mint, dill, parsley, or basil)
1 pound number four phyllo dough
2 sticks salted butter (half a pound)
sesame seeds (optional)

Crumble 1.5 pounds of feta cheese into a large bowl using your hands.

Add 1 pound of full fat, whole milk ricotta cheese to the bowl.

Add 1 cup of grated Parmesan cheese to the mixture.

Beat 2 eggs in the side of the bowl and then add to the cheese mixture.

Add 2 tablespoons of olive oil and some freshly cracked black pepper to the mixture.

Chop fresh mint leaves and add to the cheese mixture, mixing everything together.

Set the cheese filling aside and prepare the phyllo dough.

Take 1 pound of number four phyllo dough that has thawed overnight and been left at room temperature for 1-2 hours.

Cut the phyllo dough into three equal portions, each 12 inches long, and then cut those into 4-inch portions.

Melt 2 sticks of salted butter and set aside.

Layer two sheets of phyllo dough on top of each other and drizzle butter over 3/4 of the phyllo.

Place a tablespoon of cheese filling at the bottom of the phyllo and fold it into a triangle, continuing to fold until reaching the top.

If you have three sheets stuck together, use all three instead of trying to separate them.

Place the assembled tiropitakia in a buttered baking tray.
