Preheat the pan over medium heat.
Add 1 tablespoon of oil to the pan.
Add 1 heaping teaspoon of ginger paste, 2-3 cloves of minced garlic, and the whites of 2 scallions; sauté for 30-45 seconds.
Add 2 tablespoons of chili ground chili paste (sambal) to the pan.
Add 1/2 cup of sun butter (or peanut butter) and mix well.
Add 1 tablespoon of soy sauce and 1 tablespoon of sugar; combine everything.
Add 3/4 cup of coconut milk gradually, mixing it in until smooth.
Add 3 tablespoons of fresh squeezed lime juice and a pinch of salt (about 1/4 teaspoon); adjust seasoning to taste.
Add 9 ounces of fresh linguine noodles to boiling water and cook according to package instructions (about 2-3 minutes).
Reserve 1/2 cup of pasta water before draining the noodles.
With the heat off, mix the cooked noodles with the peanut sauce and reserved pasta water.
Add the greens of the fresh scallions and mix well.
Garnish with crushed sunflower seeds, more scallions, and red bell pepper.
