Split Pea and Ham Soup

Originating in the United States, Split Pea and Ham Soup is a comforting dish often made with leftover ham. Traditionally enjoyed in colder months, it showcases the simplicity and heartiness of American cooking. Today, variations exist globally, with many cultures adapting the basic concept to their local ingredients.
Chop one medium onion.
Add 1 tbsp of vegetable oil to a large pot over medium heat.
Add the chopped onion and cook until soft.
Add 1 pound of dried split peas and a large ham bone.
Pour in enough water to cover the ingredients.
Season with one pinch of salt and one pinch of pepper.
Cover the pot and cook over low heat, checking frequently to ensure the water hasn't evaporated.
Add more water as needed while cooking.
Cook until the peas are tender and break down into the liquid, about 2 hours.
Remove the soup from heat and let it stand covered to thicken.
Take the ham bone out and pull off any remaining meat, adding it back into the soup before serving.
Garnish with a little ham on top and serve with a slice of buttered toast.
