Add mustard seeds and cumin seeds, cooking until they start to pop, about 2-3 minutes.
Stir in turmeric, chili powder, and black pepper, cooking for another minute.
Add the garlic and ginger, sautéing until fragrant, about 2 minutes.
Pour in vinegar and sugar, stirring until sugar dissolves completely.
Combine the spiced mixture with the tomatoes in a large bowl.
Add chopped coriander leaves and bay leaves, mixing well.
Transfer the mixture into sterilized jars, pressing down to remove air pockets.
Seal the jars tightly and store in a cool, dark place for at least 2 weeks before consuming.
