Traditionally enjoyed as a hearty breakfast or snack, they consist of a thick flour tortilla filled with refried beans, cheese, and various toppings. Over time, Baleadas have evolved, with many variations including different proteins and salsas, making them popular not just in Honduras but throughout Central America and beyond.

Simmer black beans in 8 cups of water for 5 hours or more until soft, adding salt at the end.
Saute diced onion until it has some color, then add 2 cups of beans and simmer with 3 chile japones.
After the beans reduce in liquid, blend or mash to a paste to make refried beans.
For cashew cream, blend 1 cup of soaked cashews with 1/2 lemon juice and 2 tsp salt until smooth.
For tortillas, mix 3 cups of all-purpose flour, 2 tsp baking powder, and 1 tsp salt in a bowl.
Add 3 tbsp of vegetable shortening and 1 cup of hot water, mixing until a dough forms.
Knead the dough until smooth, then divide into portions and flatten into discs.
Cook each tortilla in a skillet until lightly browned on both sides.
