Boil flank steak in an Instant Pot with 4 cups of water, a whole peeled onion, 3 garlic cloves, cilantro, and bay leaves for 30 minutes.

Add salt and pepper to taste before pressure cooking.

Let the steak cool, then shred it across the fibers.

Chop half a sweet bell pepper, half an onion, and garlic, then sauté in vegetable oil until fragrant.

Add 2 tablespoons of tomato paste and cook for about 2 minutes.

Stir in half a cup of crushed tomatoes and the shredded beef.

Add leftover stock from the boiled meat to keep the beef juicy, about 3 ladles full.

Chop cilantro and mix it into the beef.

Soak half a bag of dried black beans overnight, or use canned beans for convenience.

Chop another half of a bell pepper, half an onion, green onion, and garlic.

Sauté the chopped aromatics in vegetable oil, then add cumin, salt, and pepper to taste.

Pressure cook the soaked black beans for about 15 minutes in the Instant Pot, or longer in a regular pot.
