12 oz penne pasta
8 oz sliced baby Bella mushrooms
4 cups chicken broth
1 cup roasted red peppers
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
2 cups spinach

Cut smoked sausage into bite-sized pieces.

Chop garlic and onion.

Slice baby Bella mushrooms.

Dump roasted red peppers into a bowl and cut them into bite-sized pieces using kitchen shears.

In a medium-sized pan (rock Croc or similar), add the smoked sausage.

If the sausage doesn't render enough fat, add 1-2 teaspoons of olive oil.
