Add diced tomatoes, paprika, and bay leaves; simmer for 10 minutes.

Add the soaked cod to the skillet; cover and cook for 15-20 minutes until fish flakes easily.
Pour in white wine and add capers; cook for an additional 5 minutes.
Garnish with chopped parsley and lemon wedges before serving.
