2 spicy red chilies
1-2 pandan leaves
2 tablespoons raw rice
1 inch cinnamon broken into pieces
4-5 green cardamoms
1 teaspoon methi (fenugreek) seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 teaspoon black peppercorns

Start by dry roasting the ingredients one by one in a pan.

Add all the ingredients to the pan, keeping the flame medium.

Stir them with a spatula to ensure even roasting.

Continue to stir and adjust the flame if it becomes too hot, but do not stop mixing.

Roast until they give out a lovely aroma and change color.

Switch off the flame while the pan is still hot and continue to stir for some more time.

Transfer the roasted spices into a grinder jar and grind them to a coarse texture.

Transfer the ground spice mix into a dry jar and use as required.
