Homemade BBQ sauce can be healthier with less sugar, and ketchup is a budget-friendly alternative.
Start with 3 pounds of ground chuck (80/20) and 1 pound of breakfast sausage.
Dice 1 large onion and add it to the meat mixture.
Instead of breadcrumbs, cube 4 slices of white bread and soak them in 1/4 to 1/2 cup of milk.
Mix the soaked bread with the meat, onion, and 2 eggs.
Add 1/2 cup of BBQ sauce and 1/4 cup of hot Worcestershire sauce (Fireshire brand) to the mixture.
Season with garlic and herb seasoning to taste.
Mix everything thoroughly until well combined.
Pack the mixture into a 9x13 loaf pan and cover it with cling wrap.
Freeze the packed meatloaf for about 4 hours to firm it up.
Remove the meatloaf from the freezer and peel off the cling wrap.
Apply more Worcestershire sauce as a binder on the outside of the meatloaf.
Season the outside of the meatloaf with all-purpose seasoning.
Place the meatloaf in the smoker at 250°F and smoke for about 4 hours until it reaches an internal temperature of 165°F.
Glaze the meatloaf with BBQ sauce after smoking and let it rest for 15 minutes before slicing.
