  • 1/2 cup brewed coffee (cooled)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. 1Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. 2In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. 3In another bowl, whisk together the brewed coffee, vegetable oil, eggs, and vanilla extract until well combined.
  4. 4Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. 5If using, fold in the chocolate chips gently into the batter.
  6. 6Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  7. 7Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. 9Once cooled, frost with your favorite frosting or enjoy plain.
