Begin with 1/2 cup of warm water in a mixing bowl.
Add 2 1/4 teaspoons of active dry yeast to the warm water and mix until foamy, letting it sit for a few minutes.
Measure out 1/2 cup of buttermilk and add it to the mixing bowl.
Crack in 1 egg and add 1/2 cup of softened butter to the mixture.
Pour in 1/4 cup of honey and give the mixture a cursory stir to combine.
Measure out 2 1/2 cups of fresh ground spelt flour and 1 3/4 cups of all-purpose flour, adding them to the bowl.
Add 3/4 teaspoon of salt to the flour mixture.
Mix all ingredients until there is no dry flour left, using a dough whisk or stand mixer.
Knead the dough in the stand mixer or by hand until it is slightly sticky but not overly wet, ensuring it remains on the wet side to avoid dense rolls.
Let the dough rest in a warm place until it rises and doubles in size, about 1 hour.
Punch down the risen dough and divide it into equal pieces.
Shape each piece into a ball and place them in a greased baking dish.
Cover the rolls and let them rise again for about 30 minutes until puffy.
Preheat the oven to 375°F (190°C).
Bake the rolls for 15-20 minutes until golden brown.
