all-purpose flour

Warm 1 cup of milk and 1/2 cup of water to about 110 degrees.
Stir in 1/4 cup of sugar and mix.
Melt some butter in a separate container.
Combine the warm milk, water, sugar, and melted butter together.
Add 1 packet of active dry yeast and stir lightly to incorporate.
Let the yeast mixture bloom until foamy on top.
In a stand mixer, combine 4 cups of all-purpose flour and 1 1/2 teaspoons of kosher salt.
Mix the flour and salt together with a dough hook for a few minutes.
Add the foamy yeast mixture, 1 beaten egg, and 1 egg yolk to the flour mixture.
Knead the dough with the stand mixer for 5 to 8 minutes until smooth and elastic.
Transfer the dough to a lightly greased bowl, cover with a towel, and let it rise for about 1 hour until doubled in size.
Punch down the risen dough and knead it a couple of times on a floured surface.
Roll the dough into a rectangle and then roll it up tightly to form a log.
Cut the log into about 15 equal pieces and shape each piece into a ball.
Place the dough balls seam side down in a greased cast iron pan.
Cover the pan with a towel and let the rolls rise for another 30 minutes.
Preheat the oven to 350°F.
Mix 1 egg with 1 tablespoon of water and brush the mixture over the rolls.
Bake the rolls in the oven for about 25 minutes until golden brown.
