Servings4
2 small onions
1 carrot
1/2 red bell pepper
3 potatoes (2 small and 1 medium)
1 pork sausage (about half a pound)
1/2 pound roast beef
dry pasta (Fusilli or any shape you prefer)
fresh oregano
dry oregano
2 bay leaves
dry chili flakes
1 cube beef stock (optional)
3 teaspoons sweet paprika (Pimentón)
salt
oil or rendered fat (about 1 tablespoon)
1

Slice the onions very fine.

2

Cut the bell pepper into very fine slices after removing the seeds and white parts.

3

Slice the carrot very fine.

4

Cut the meat into big chunks and remove the casing from the sausage.

5

Cut the potatoes into cubes.

6

Heat a pot on the stove and add about 1 tablespoon of rendered fat or oil until it melts.

7

Add the sliced onions, carrots, and bell peppers to the pot and mix them.

8

Cook the vegetables until they are soft and the onions turn translucent.

9

Add salt to taste (about 1 teaspoon) and mix well, then cover and cook for a few minutes.

10

Add the beef and sausage to the pot, breaking up the sausage with a wooden spoon and mixing well.

11

Cover and cook for a few minutes until the meat starts to cook, then add a little water (just enough to not cover everything).

12

Add the beef stock cube (if using) and 2-3 teaspoons of sweet paprika, along with the dry and fresh oregano and about half a teaspoon of dry chili flakes. Mix well and let it simmer for about 5 minutes.

13

After 5 minutes, add the cubed potatoes and enough hot water to cover the potatoes. Cover the pot.

14

Wait until the potatoes are almost done, then add the pasta, the two bay leaves, and some more water. Mix well.

15

Let it simmer for about 10 minutes or until the pasta is cooked.
