Measure 1 cup of sushi rice and add it to a pot.
Add 1 and 1/4 cups of water to the pot with the rice.
Bring the pot to a boil with the lid on, then reduce to a simmer for 20 minutes.
After 20 minutes, turn off the heat and let the rice sit covered for 5 minutes.
In a bowl, mix plain unseasoned rice vinegar, sugar, and salt until dissolved to make seasoned vinegar.
Once the rice has cooled slightly, scoop it onto a platter and drizzle with half of the vinegar mixture, tossing gently to combine.
Prepare vegetables: slice red bell pepper into thin strips, cut carrot into thin strips, and score avocado without scooping it out.
Cut cucumber into strips about the same length as the nori sheets, which are approximately six inches square.
Place a nori sheet shiny side down on a bamboo sushi mat, and wet your hands to prevent sticking.
Spread about half a cup of sushi rice evenly over the nori, leaving a 1-inch border at the top.
Layer the prepared vegetables evenly across the rice, keeping them in a straight line.
Roll the sushi tightly away from you using the bamboo mat, applying gentle pressure to form a cylinder.
Seal the edge of the nori with a bit of water to hold it together.
Use a sharp knife to cut the roll in half, then cut each half into four equal pieces for a total of eight pieces.
Serve sushi with wasabi, soy sauce, and pickled ginger on the side.
