- ●1 cup diced onions
- ●1/2 cup sliced black olives
- ●1/4 cup chopped fresh cilantro
- ●1/2 cup sour cream (for serving)
- ●1/2 cup salsa (for serving)
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
- 3Drain excess fat, then add chili powder, cumin, garlic powder, onion powder, salt, and black pepper to the beef. Stir to combine and cook for another 2 minutes.
- 4On a large sheet pan, lay out two flour tortillas. Spread half of the beef mixture evenly over each tortilla.
- 5Sprinkle half of the shredded cheddar cheese over the beef on each tortilla.
- 6Add diced bell peppers, onions, and black olives evenly over the cheese.
- 7Top with the remaining beef mixture and the rest of the cheese.
- 8Place the other two tortillas on top to create quesadilla stacks.
- 9Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden and the cheese is melted.
- 10Remove from the oven and let cool for a few minutes before slicing into wedges.
- 11Garnish with chopped cilantro and serve with sour cream and salsa.
