- 4Stir all the ingredients together until well combined.
- 5Cover the crockpot and cook on low for 2-3 hours, or until the cheeses are melted and the dip is heated through.
- 6Stir the dip again before serving to ensure everything is mixed well.
- 7Serve warm with tortilla chips, crackers, or fresh vegetables for dipping.

- 5Cook for about 2-3 minutes on one side until golden brown, then carefully flip and cook for another 2-3 minutes on the other side until the cheese is melted and the tortilla is crispy.
- 6Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling, adding more olive oil as needed.
- 7Once all quesadillas are cooked, cut them into wedges and serve warm with sour cream and salsa on the side.
