Remove the core from the cabbage using a serrated knife.
Boil a pot of water with salt added.
Carefully add the cabbage to the boiling water and boil for about 15 minutes.
After 10 minutes, carefully remove the leaves and place them in a colander to cool.
Chop the core of the cabbage if desired for the filling.
In a bowl, combine 2 lbs of ground beef, 1 cup of risotto rice, chopped onion, and chopped parsley.
Season the mixture with salt, black pepper, and dried dill, then mix well.
Cut off the thick stem from each cabbage leaf.
Take about a tablespoon and a half of the filling, form it into a small elongated shape, and place it on the leaf.
Roll the leaf up, tucking in the sides, and repeat until all filling is used.
Line the bottom of the pot with torn cabbage leaves, then arrange the rolls on top.
Drizzle olive oil over the cabbage rolls and season lightly with salt.
Invert a plate over the rolls to keep them in place while cooking.
Pour enough chicken stock to cover the rolls completely, about 1 quart.
Bring to a boil, then reduce heat to a low simmer and cover, cooking for 45 minutes to an hour.
Remove the cabbage rolls carefully to access the broth for the sauce.
In a bowl, whisk together 3 egg yolks, 1.5 tablespoons of cornstarch, and fresh lemon juice (starting with 1/4 cup).
Temper the egg yolks with hot stock from the pot, whisking until smooth.
Return the cabbage rolls to the pot and pour the egg lemon sauce over them, shaking the pot to distribute evenly.
Cook for about 5 minutes until the sauce thickens.
