2 cups dried pinto beans
6 cups water
1 onion, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
2 tbsp olive oil
1/4 cup chopped cilantro (for garnish)

Rinse the dried pinto beans under cold water and remove any debris.

In a large pot, combine the rinsed beans and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low and cover the pot. Let the beans simmer for about 1.5 to 2 hours, or until tender.

In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.

Once the beans are tender, drain any excess water and add the sautéed onion and garlic to the pot with the beans.

Stir in the cumin, salt, black pepper, and cayenne pepper (if using). Cook for an additional 10-15 minutes to allow the flavors to meld.
