Frijoles Charros

Cultural Context

Frijoles Charros, or Charro Beans, are a traditional Mexican dish often served at gatherings and celebrations. They are a hearty and flavorful bean dish, typically made with pinto beans and various meats, reflecting the rustic cuisine of rural Mexico. The dish is named after the charros, or Mexican cowboys, who would prepare these beans as a staple during their long days in the fields. Each region may have its own variations, incorporating local ingredients and spices.

1

Set pot to medium-high heat and add 6 cups of water.

2

Add 1 pound of pinto beans and 1 tablespoon of salt and 1 tablespoon of oil to the pot.

3

Cover the pot and cook for about an hour and a half.

4

Dice half of a small white onion, 1 jalapeno (removing the seeds), and 2 Roma tomatoes.

5

Cut 1/2 pound of bacon into smaller pieces and slice 3 weenies.

6

Set a pan to medium heat and start cooking the bacon, moving it around until it fries for about 5 minutes.

7

Add the sliced weenies to the pan and cook until they brown.

8

Remove some excess oil from the pan before adding in 1/2 pound of chorizo, breaking it down as it cooks.

9

Once the chorizo is fully mixed in with the bacon and weenies, add the diced onion and jalapeno and cook for about 1 minute.

10

Add the diced tomatoes to the mixture and mix well before turning off the heat and setting it aside.

11

Check the beans after an hour and 45 minutes; they should be ready if you can easily smash one.

12

Add the meat and vegetable mixture to the beans and mix it in.

13

Add a small bunch of cilantro, cover the pot, and cook for about 5 minutes.

14

After 5 minutes, serve the Frijoles Charros.
