Clean and rinse the dried pinto beans thoroughly.

Transfer the beans to a pressure cooker.

Add garlic cloves, a piece of onion, 1 tbsp of chicken bullion, 1 1/2 tsp of ground cumin, and black pepper to the beans.

Cover the beans with water up to the max line in the pressure cooker.

Seal the pressure cooker and cook on high for 55 minutes.

Once the beans are done, set them aside to prepare the rest of the ingredients.

Heat a Dutch oven over medium-high heat.

Add the bacon to the Dutch oven and cook until fully cooked, about 8 minutes.

Remove the bacon from the pot and drain excess grease.

Add the countrystyle pork ribs to the pot, seasoning with 1 1/2 tsp of salt, black pepper, and 1 tsp of New Mexico powder.

Cook the pork ribs for about 15 minutes or until fully cooked and tender, then remove from the pot.

Add the chisso to the pot and cook for 5 minutes, breaking it down.

Add the weenies or ham to the pot and mix, cooking for an additional 3 minutes.

Add the onion and bell pepper along with the tomatoes, mixing and cooking for another 3 minutes.

Add the chile de ar and chopped cilantro to the mixture.

Return the cooked meats to the pot, reserving some bacon for garnish.

Add the cooked beans to the pot, removing the onion and garlic from the beans, and include all the broth.

Add oregano, rubbing it between your hands before mixing it in, and bring to a simmer.

Once simmering, add the chicharon and submerge it in the mixture.

Taste for salt and adjust as needed, then let it cook for a few more minutes before serving.
