Frijoles Charros

Cultural Context

Frijoles Charros, or Charro Beans, are a traditional Mexican dish often served at gatherings and celebrations. They are a hearty and flavorful bean dish, typically made with pinto beans and various meats, reflecting the rustic cuisine of rural Mexico. The dish is named after the charros, or Mexican cowboys, who would prepare these beans as a staple during their long days in the fields. Each region may have its own variations, incorporating local ingredients and spices.

1

Pour out 1 cup of pinto beans onto the countertop and pick out any broken pieces or rocks.

2

Rinse the beans well and add them to a pot along with 2 garlic cloves and 1/4 of a piece of onion.

3

Fill the pot about halfway with water and sprinkle in some salt.

4

Turn the heat to high and allow the beans to come to a simmer.

5

Once the water comes to a simmer, cover with a lid, lower the heat to medium low, and simmer for 2 and 1/2 hours, checking every 45 minutes to top off with more water as needed.

6

After 2 and 1/2 hours, set the beans aside.

7

In a large pot, add in 1/2 package of chopped bacon and cook for 5 minutes.

8

After 5 minutes, add in 2 sliced weenies and 2 chili wet, cooking for 7 minutes until browned.

9

Add in a handful of chorizo and break it up, allowing it to cook for 4 minutes.

10

After 4 minutes, add in 1/2 small diced onion and 2 diced jalapeños, mixing and cooking for 5 minutes until softened.

11

Mix in 2 Roma tomatoes and cook for about 1 minute before pouring in the entire pot of boiled beans.

12

Stir in a handful of cilantro and allow everything to simmer for 3 minutes.
