Add 2 1/3 cups of warm water to a bowl.

Mix in 1/3 cup of psyllium husk and 1 teaspoon of yeast; let sit for about 5 minutes until it gels.

In a separate bowl, combine 1 1/4 cups of millet flour, 3/4 cup of sorghum flour, 1/2 cup of potato starch, and 1/2 cup of arrowroot starch.

Add 2 tablespoons of rapadura brown sugar and 1 teaspoon of salt to the dry ingredients and mix well.

After the psyllium husk mixture has gelled, add it to the flour mixture and mix until well combined using a paddle mixer.

Let the dough mix for an additional 30 seconds to 1 minute until it forms a tacky but not overly sticky mass.

Cover the bowl with the dough and let it rise for 1 hour.

After 1 hour, shape the dough into a loaf by pressing it down and rolling it.

Place the loaf in a greased non-stick pan and let it rise for 30 to 45 minutes.

Preheat the oven to 450°F while the dough is rising.

After 45 minutes, check the dough; it should have risen close to the top of the pan.

Bake the loaf in the preheated oven for 40 to 55 minutes, checking for doneness at 45 minutes.
