1

Heat a 12-inch sauté pan over high heat and add 5 tablespoons of extra virgin olive oil.

2

Add 2 cloves of halved garlic and chili pepper to the pan, sauté until golden without burning the garlic.

3

Add 2 pounds of baby octopus to the pan and stir to coat in the oil.

4

Cover the pan and let the octopus release its own water for about 5-6 minutes.

5

Remove the lid and check how much water has been released by the octopus.

6

Add 1/2 cup of dry white wine to the pan and keep the flame on high, allowing it to boil for a few minutes.

7

Add cherry tomatoes and parsley to the pan, then lower the flame to medium.

8

Place a wooden spoon across the pan and cover to let it cook for about 15 minutes.

9

Check the tenderness of the octopus after 15 minutes; if not tender, cover and check again in another 15 minutes.

10

Once tender, serve the octopus as an appetizer with toasted bread.
