5 ounces Yellow Onion (Sliced)
14 fl. Ounces Coconut Milk
16 fl. Ounces Vegetable Broth
1 tbsp Palm Sugar
12 ounces Firm Tofu (Diced)
4 ounces Japanese eggplant (diced)
6.6 ounces Bamboo shoot (from can, strip)
8 Kaffir lime leaves
4 ounces Red Bell Pepper (Sliced long strip)

Heat oil in a heavy-based skillet over medium-high heat.

Saute onion, curry paste, and garlic and cook for 2 minutes.

Add 3 tbsp of coconut milk and stir.

Add lime leaves, palm sugar, and quinoa and stir for about 1 minute.

Add vegetable broth and the rest of the coconut milk. Stir until it starts boiling.

Add eggplant, tofu and bamboo shoots.

Cover and simmer on low heat for about 15 minutes or until all of the liquid is absorbed and the quinoa's kernels have popped open.

Season with salt and garnish with Thai basil leaves and red bell pepper.
