Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat.

Stir in the cooked sausage, 6 ounces of cubed French bread, 3/4 cup of cheddar cheese, and 3/4 cup of Monterey Jack cheese.
Dump everything into a 13 by 9 inch baking dish.
Cover the dish with foil or plastic wrap and refrigerate overnight.
The next morning, take the casserole out of the fridge and let it sit at room temperature while preheating the oven to 350°F (175°C).
Remove the foil or plastic wrap and bake for about 45 minutes.
Check for doneness by inserting a toothpick into the center; it should come out clean.
Let the casserole cool for about 10 minutes before serving.
