1

Wash 1 cup quinoa under running water to remove any dirt.

2

In the same container used to measure quinoa, add 1 and 3/4 cups water and a pinch of salt. Cover and bring to a boil.

3

Once boiling, reduce heat to the lowest setting and cook for 15 minutes.

4

After 15 minutes, turn off the heat and let it rest for 10 minutes.

5

Open the can of chickpeas, drain, and set aside.

6

Peel and chop the zucchini, summer squash, carrot, bell pepper, and onion.

7

In a pan, add cooking oil (avocado) and heat it up.

8

Add the chopped onions and carrots to the pan, followed by the bell peppers. Season with salt and pepper.

9

Sauté the vegetables until they start to caramelize on the edges, then turn the heat up.

10

Cover the pan and cook the vegetables for about 5 minutes, occasionally stirring.

11

Add the spices: coriander, cumin, paprika, chili powder, thyme, and oregano to the pan.

12

Add the drained chickpeas, zucchini, and summer squash to the pan. Splash in a little water and cover to finish cooking the zucchini.

13

Add ginger and garlic to the pan and continue cooking on low heat.

14

Add chopped scallions and parsley, along with a squeeze of lemon juice and a drizzle of extra virgin olive oil.

15

Stir in the cooked quinoa and mix well, reserving some quinoa for future use.

16

Cover and let the dish rest for about 5 minutes to absorb flavors.

17

Finish with additional scallions, parsley, and olive oil before serving.
