Spaghetti Squash Primavera

1 medium Spaghetti Squash
1 broccoli
1 sweet yellow pepper
2 carrots
1/2 cup cherry tomatoes
1/4 sweet yellow onion
1 garlic clove
1/2 cup Mushrooms
Avocado oil
1/2 teaspoon Salt
1 tablespoon of coconut oil
4 teaspoons parmesan cheese (optional)

Preheat the oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds.

Drizzle 1 tablespoon of olive oil over the cut sides of the squash and season with salt and pepper.

Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.

While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat.

Add the diced onion and garlic to the skillet, sautéing until the onion is translucent.

Add the bell pepper, zucchini, and broccoli to the skillet, cooking for about 5-7 minutes until they are tender.

Stir in the cherry tomatoes, oregano, and basil, cooking for an additional 2-3 minutes.

Once the squash is done, use a fork to scrape the flesh into strands and add it to the skillet with the vegetables.

Toss everything together, adjust seasoning with salt and pepper, and serve topped with Parmesan cheese if desired.
