1 medium red onion, chopped
1 medium leek, chopped
4 cups carrots, chopped
1 medium sweet potato, peeled and diced
1 medium white potato, peeled and diced
1 teaspoon salt
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon curry powder
1 star anise
2 cloves garlic, minced
1 tablespoon ginger, minced
4 cups vegetable stock
1 tablespoon balsamic vinegar
2 tablespoons petzi
2 tablespoons camata olive paste
1/4 cup parsley, chopped
1/2 cup yogurt
1/4 cup feta cheese

Heat olive oil in a pot until warm.

Add chopped red onion and leek; sweat them in the olive oil.

Stir in chopped carrots, sweet potato, and white potato; mix well.

Add salt to help draw out moisture from the vegetables.

Sprinkle in turmeric, cumin, and curry powder; stir to coat the vegetables.

Cover the pot and let the vegetables sweat for about 7-8 minutes.

Chop garlic and add it to the pot along with grated ginger; cook until softened.

Pour in enough vegetable stock to cover the contents by 3/4 to 1 inch.

Simmer for about 35-40 minutes until vegetables are very soft.
