Heat a large pot over medium heat and add vegetable oil.
Add 1 pound of chicken thigh, seasoned with salt and pepper, and cook for 3 to 4 minutes until lightly browned.
Remove chicken and set aside in a bowl.
Add more oil if needed, then add chopped medium-sized onion and chopped carrot, cooking for 4 to 5 minutes until softened.
Add 1 tablespoon garlic and 1 tablespoon ginger paste, cooking for 30 seconds until fragrant.
Stir in 1 tablespoon garam masala and 2 tablespoons Japanese curry powder, blooming them in the pan.
Add 6 cups of chicken stock and mix well, bringing to a boil.
Simmer for 20 minutes to let flavors meld and vegetables soften.
In a separate pan, melt 3 tablespoons of butter over medium heat.
Stir in 3 tablespoons of flour to make a roux, cooking for about 5 minutes until lightly colored.
Add 1 cup of the simmering liquid from the pot to the roux, stirring to combine.
Add 1/4 cup of red miso and cook for about a minute to develop flavors.
Combine the roux with the curry pot, then add the chicken back in along with any accumulated juices.
