Peel the potatoes and dice them into medium-sized pieces.
Boil the diced potatoes in salted water for 10 minutes on medium-low heat.
In a separate pot, boil the eggs for 10 minutes until hard-boiled.
Drain the potatoes and set aside to cool.
Drain excess water from the mixed vegetables before adding to the potatoes.
Combine the cooked potatoes, mixed vegetables, and boiled eggs in a large bowl.
Crush some of the potatoes slightly but leave some whole.
Add roughly 5 teaspoons of mayonnaise to the mixture and stir to combine.
Add yellow mustard, creole seasoning, black pepper, french dressing, sour cream, and salt to taste.
Grate half of the onion into the mixture and mix everything together until well combined.
Taste and adjust seasoning if necessary.
