Fully Loaded Oven-Baked Frittata

Mix dry ingredients: polenta, white quinoa, bicarb, cumin, coriander powder, and smoked chili flakes.
Add chopped mushrooms to the dry mixture and mix well.
Pour in about 1/2 cup of b-well canola oil to the mixture.
Add 3 tablespoons of bee well canola mayo to the mixture for creaminess.
Mix the ingredients thoroughly to ensure the wet ingredients are well distributed.
Add the sweet corn to the mixture and stir.
Incorporate the spinach into the mixture and mix until combined.
Sprinkle sesame seeds and garlic flakes on top of the mixture.
Add some grated hard cheese on top for extra flavor.
Transfer the mixture into ramekins and place them in the oven preheated to 180°C (350°F).
Bake for 30-40 minutes until set, checking for browning and covering with foil if necessary.
