Ingredients

  • 1 block (14 oz) firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cornstarch

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Drain the tofu and press it between paper towels to remove excess moisture.
  3. 3Cut the tofu into cubes or slices, depending on your preference.
  4. 4In a bowl, mix the soy sauce, olive oil, garlic powder, onion powder, salt, and black pepper.
  5. 5Add the tofu to the bowl and gently toss to coat the pieces evenly with the marinade.
  6. 6Sprinkle the cornstarch over the marinated tofu and toss again until all pieces are coated.
  7. 7Line a baking sheet with parchment paper and spread the tofu in a single layer.
  8. 8Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
  9. 9Remove from the oven and let cool slightly before serving.

Instructions

  1. 1Wash the kale leaves thoroughly and remove the stems.
  2. 2Tear the kale into bite-sized pieces and place them in a large bowl.
  3. 3Drizzle the olive oil over the kale and sprinkle with sea salt.
  4. 4Using your hands, massage the kale for about 2-3 minutes until it becomes tender and darkens in color.
  5. 5Add the lemon juice to the massaged kale and mix well.
  6. 6Incorporate the cherry tomatoes, cucumber, and red onion into the salad.
  7. 7If using, add the crumbled feta cheese and chopped walnuts.
  8. 8Toss everything together until well combined.
  9. 9Serve immediately or let it sit for 10-15 minutes to allow the flavors to meld.
