2 cups beef broth
1 (15 ounce) can tomato sauce
3 cloves garlic, minced (about 1 tablespoon)
2 tablespoons soy sauce
2 teaspoons Italian seasoning
1 teaspoon sugar
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 cup uncooked long grain white rice
1 small yellow onion, diced (about 1 cup)
2 medium sweet bell peppers, seeded and diced
1 (14.5 ounce) can petite diced tomatoes, drained
1 cup grated cheddar cheese or Colby-Jack cheese
Optional garnish: chopped fresh herbs such as parsley, thyme, or basil

Preheat the oven to 375°F (190°C). Spray a 9 x 13-inch baking dish with nonstick cooking spray.

Brown the ground beef in a large skillet over medium-high heat until no longer pink. Drain off the excess grease. Set aside.
