1

Melt 1 tablespoon of butter in a pan.

2

Cut a leek in half, rinse under water to remove any dirt, and chop it up, avoiding the dark green parts.

3

In the same pan, add 2 tablespoons of butter and the chopped leeks, then sauté.

4

Add 6 cloves of minced garlic and cook until fragrant, about a few seconds.

5

Bring 6 cups of chicken stock to a boil, then reduce to a slow simmer.

6

Add 1.5 cups of short grain rice to the pan and toast for 1-2 minutes, stirring frequently.

7

Pour in room temperature white wine and cook until no liquid remains, stirring continuously.

8

Add chicken stock one ladle at a time, stirring often until the rice is cooked al dente, using almost all the stock but leaving about 1 cup.

9

Once the rice is done, lower the heat and add 1 tablespoon of butter, lemon zest, and 1 teaspoon of grated pecorino romano cheese, stirring to combine.

10

Check the salt and pepper to taste before serving.
