Crack 6 large eggs into a bowl and season with salt and black pepper to taste.

Heat 30 ml olive oil in a frying pan.

Dice 90 g onion and add it into the frying pan, stirring.

Slice 120 g mushrooms and add to the frying pan, stirring.

Dice 90 g ham and mince 2 cloves garlic, adding them to the frying pan and stirring.

Add spinach and stir until wilted.

Remove from the heat and let it cool for 5 minutes.

Pour the vegetable and ham mixture into the eggs.

Add 60 g grated cheddar or parmesan cheese and mix well.

Heat 20 ml olive oil in a 9-inch frying pan.

Turn the pan so that the edges are coated with oil.

Scrape the egg mixture into the frying pan.

Cover and cook over medium heat for about 2 minutes.

Open the lid and tilt the pan so the liquid overflows to the edges.

Loosen the edges to allow the liquid to cook faster.
