Add carrots, beetroot, sweet potato, and eggplant; stir for another 3-4 minutes.
Add cooking banana and mix well.
Sprinkle in salt, black pepper, crushed chili pieces, turmeric, chili powder, roasted curry powder, and unroasted curry powder; stir for 2 minutes.
Pour in coconut milk and stir to combine.
Cover the pot and reduce heat to a simmer; cook for about 8 minutes until vegetables are tender.
