Start the Instant Pot on sauté mode and add 3 tablespoons of olive oil.

Once the oil is hot, add 1 roughly chopped onion, 1 jalapeno, and 4 smashed garlic cloves.

Pour in 4 cups of chicken broth and 1.5 cups of water; stir and scrape any bits stuck to the bottom.

Rinse and clean 1 pound of dried pinto beans and add them to the pot along with 1 bay leaf; stir again.

Turn off sauté mode, lock the lid, and set to pressure cook on high for 50 minutes.
