Refried beans, or frijoles refritos, are a staple in Mexican cuisine, often served alongside rice, tortillas, or as a filling in various dishes. The name comes from the traditional method of frying the beans twice, which enhances their flavor and texture. This dish reflects the resourcefulness of Mexican cooking, utilizing simple ingredients to create a hearty and nutritious meal.

Sort through the pinto beans, removing any questionable ones.
Soak the cleaned beans in water overnight.
Drain the soaked beans and rinse them with fresh water.
Place the beans in a crock pot and cover them with 7-8 cups of water.
Cook the beans on low for about 6 hours.
Add salt to the beans in the last half hour of cooking.
Once cooked, store the beans in a container with a lid in the refrigerator.
Heat a skillet over medium-high heat and coat it with a little vegetable oil.
Ladle in the beans along with plenty of the cooking liquid to achieve creaminess.
Mash the beans to your desired consistency, adding more liquid if needed.
Sprinkle in freshly grated mild cheddar cheese and let it melt into the beans.
For a variation, cook chorizo in the skillet, then add the beans and some liquid, and mash together.
