Peel the potatoes and cut them into chunks (optional to skip peeling if using garden potatoes).

Add 2 tablespoons of olive oil to the potatoes.

Pour in 1/2 cup of vegetable broth.

Add 2 tablespoons of lemon juice.

Sprinkle in 1 teaspoon of dried oregano.

Season with salt to taste.

Mince 5 garlic cloves and add to the mixture.

Using your hands, combine all ingredients thoroughly.

Transfer the potatoes into a roasting tin and cover it with aluminum foil.

Preheat the oven to 170 degrees Celsius.

Bake the potatoes covered for 70 minutes.

Remove the tin from the oven and take off the foil.

Return the potatoes uncovered to the oven and roast for an additional 15 minutes until lightly golden and all liquid has evaporated.
